Crispy Chicken Cutlets

What is better than some crispy Chicken Cutlets that are packed with flavors and fried to perfection? Even crispier fried Chicken Cutlets! That’s right! These cutlets are so delicious and very easy to make.

Fried chicken cutlets are a delight treat that everyone will enjoy. They are made from the breast part of the chicken which is not the best part for frying, but this recipe will ensure your chicken cutlets are juicy and tender. The key to getting the perfect cutlet is cutting them as thinly as you can. You can purchase already thinly sliced chicken breast, but those would probably be priced higher, so just carefully slice your chicken breast cross-wise before seasoning.

What do I need to make these delicious Chicken Cutlets

  • Chicken Cutlets- It is better to not purchase split chicken breast since it is bone in, but if you do, just remove that part along with the skin.
  • Breadcrumbs- I used Italian breadcrumbs for this recipe. It is more flavorful than panko in my opinion, but of course any breadcrumbs will work. Some people use both flour and breadcrumbs but that is optional. You can use cornflakes as well, but that will not give you the crispy breading texture desired.
  • Oil- The oil used for frying is very important. High smoke point oil is best, I used Canola Oil. Other high smoke oils are avocado oil, peanut oil and grapeseed oil.
  • Egg- Eggs are very important when making fried chicken cutlets or any other fried food that requires a breading. This helps your breading to stick to your chicken, you can substitute buttermilk for egg if you like.
  • Seasonings- Of course you have to season your chicken! Haha! This is the most important ingredient in this dish, even if its just some salt and pepper. I kept the seasonings very simple, which I rarely ever do. I used some black parmesan seasoning, all purpose and red pepper flakes.

Ingredients

  1. 3 large chicken breasts
  2. 2 eggs
  3. 1 tbsp black parmesan seasoning
  4. 1 tbsp all purpose seasoning
  5. 1 tsp red pepper flakes
  6. 2 cups breadcrumbs
  7. 2 tsp salt
  8. 2 tsp dried oregano
  9. 2 cups canola oil

Directions

  1. Slice chicken breast cross-wise into two or three, depending on the size of your chicken breast.
  2. Add chicken to large bowl followed by eggs, parmesan seasoning, all purpose seasoning and red pepper flakes. Rub together and set aside to marinate for at least 20 minutes, the longer the better. (If you will be marinating for a longer time, then transfer to refrigerator)
  3. Add breadcrumbs to another bowl along with salt and dried oregano, mix well.
  4. Transfer each piece of chicken to breadcrumbs and dredge carefully ensuring that each piece is well coated. Shake of excess breadcrumbs and set aside on a rack until all the pieces are coated.
  5. Add oil to large skillet over high heat and allow oil to get hot.
  6. Once oil is hot, add chicken breast individually and cook for 5 minutes per side until golden brown. If you are deep frying, then flipping chicken will not be necessary.

Tips on making the best Chicken Cutlets

  • Season ahead of time– This allows your chicken to marinate and soak up all the flavors, which will have your chicken cutlets tasting so much better.
  • Season every step– Its a great idea to not only season your chicken, but your breadcrumbs or flour too. This ensures your chicken is packed with flavors right through out.
  • Use the right oil– As I mentioned earlier, using an oil with a high smoke point is highly recommended. This is an important step when trying to make the perfect chicken cutlets. High smoke point oils are Avocado Oil, Canola Oil, Peanut Oil and Grapeseed Oil.
  • Ensure oil is hot enough– Not hot enough or cold oil will have your chicken cutlets soggy and overall distasteful. Ensure oil is hot enough by simply dipping a wooden spoon in, if no bubbles appear then your oil is not ready as yet.
  • Forget about using paper towels to remove excess oil– This is another step that will cause your chicken cutlets to be soggy. The paper towel traps the hot oil which starts to soak into your chicken, you can remove excess oil by simply setting on a rack or just forget the step completely.
