Stuffed Chicken Breast with Spinach and Cheese

Beautifully seared on the outside and tender and juicy on the inside, this Stuffed Chicken Breast recipe is perfect for a fancy dinner like a date night. Paired with your favorite glass of wine and your favorite sides. With little to no effort to prepare, this stuffed chicken will be ready in under 20 minutes.

You can use your favorite cheeses to stuff your chicken breast and switch up a few things to make the recipe your own. I recommend serving over a bed of hot buttery mashed potato along with your desired vegetable.

Stuffed Chicken Breast with Spinach and Cheese

Equipment

  • Skillet baking dish

Ingredients
  

  • 4 large chicken breast
  • 1 tbsp all purpose seasoning
  • 1 tbsp paprika
  • 2 packs sazon
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 tbsp oil
  • 1 tbsp butter
  • pinch of salt

For Filling

  • 1/2 onion finely chopped
  • 4 cloves garlic minced
  • 2 cups spinach chopped
  • 1 cup mozzarella shredded
  • 1/2 cup parmesan grated
  • 4 oz cream cheese 8 tbsp

Instructions
 

  • Preheat oven to 425F
  • Clean and wash chicken as preferred
  • Lay each chicken breast on flat surface and slit horizontally making a pocket or butterfly, ensure not to cut all the way through. Around 3/4 of the way.
  • Combine seasonings in small bowl, add a drizzle of oil to chicken and season, set aside
  • Heat a large skillet and add 1 tbsp oil. Saute onions for 3 mins
  • Add garlic, saute for 2 mins, then add spinach. Cook together for around 5 mins
  • Add cooked spinach to a bowl along with remaining filling ingredients and mix well
  • Stuff each chicken breast with filling, ensuring not to over stuff.
  • Add butter to the same skillet and melt over medium high
  • Once melted, sear chicken pieces around 4-5 mins per side
  • Transfer to baking dish for and bake for 10-12 mins (depending on thickness)
  • Broil on low for 3 mins to get that extra seared look.
