Delicious Red Velvet Cupcakes

These delicious Red Velvet Cupcakes are a delight treat that I would only have once in a while, however I decided to make these for Valentines Day and it was the best decision ever. I must say though, that making these cupcakes were a little more challenging than I expected. It took me baking two batches of the Red Velvet Cupcakes to get this perfect recipe that I am so excited to share with you.

Special Ingredients for This Recipe

There a few special ingredients needed to make these soft and delicious Red Velvet Cupcakes

  1. Buttermilk– The buttermilk used for this recipe is very important. It is made up of a bunch of acids due to the fermentation process when making. It activates the baking soda which creates gas that is needed for the dough to rise. It also adds flavor which balances the sweetness. Buttermilk is not an ingredient that everyone might have on hand, but there are multiple substitutions that works just the same.

Buttermilk Substitutions

  • Milk and White Vinegar- 1 cup milk to 1 tbsp vinegar. This recipe calls for 1/4 cup of buttermilk so a 1/4 cup of this substitution would be required.
  • Milk and Lemon Juice- as we know lemon juice is very acidic, and when combined with milk it creates the prefect substitution for buttermilk. This recipe calls for 1/4 Cups of buttermilk, so to make the buttermilk substitution we need 1 tbsp of lemon juice to 3 tbsp of milk.
  • Plain Yogurt and Milk- 1/4 cup of milk to 3/4 Yogurt would make 1 cup of buttermilk substitute, so this recipe would only use 1/4 cup of that.

Coco Powder– I’m pretty sure coco powder is an ingredient we would all have in our pantry. who doesn’t love hot coco! This adds flavor to cupcakes but is not too overpowering.

Red Food Coloring-Yes! I said food coloring! Just 2 tsp of red food coloring is required for this Red Velvet Cupcake recipe, of course that’s how we get the red color for our cupcakes.

Ingredients

  • 3/4 cups of all purpose flour
  • 2 tbsp unsweetened coco powder
  • 1 tsp baking powder 1/2 cup granulated sugar
  • 1/2 cup softened butter
  • 1 large egg
  • 3 tsp red food coloring
  • 1 tsp vanilla extract
  • 1/2 tsp white distilled vinegar
  • 1/4 cup buttermilk

Directions

  1. Preheat oven to 350F (175C) and line cupcake pan with 8 liners
  2. In a large bowl, sift flour, and add coco powder, baking powder and salt
  3. In another bowl, beat the sugar and softened butter together, add egg, vanilla and vinegar and continue to mix together.
  4. Gradually add flour followed by buttermilk (half of each alternately)
  5. Transfer batter to liners using ice-cream scooper or a regular spoon, fill liners leaving just a little space at the top
  6. Bake for 15-20 minutes and test doneness witha toothpick. Cupcakes are ready when toothpick comes out dry.
  7. Allow to cool and decorate with cream cheese frosting
