Creamy Spinach Chicken

Creamy Spinach Chicken is a dish that everyone in the family will enjoy. This one pan chicken dish is very easy to prepare and and will have dinner ready in 30 minutes. This quick meal is perfect for a date night at home, and pairs well with a glass of red wine.

I served my Creamy Spinach Chicken over white rice, but it goes even better with buttery mashed potatoes.

Boneless chicken thighs were used for this recipe but if you have chicken breast on hand, then that will do. Using chicken breast would of course decrease the cooking time compared to using chicken thighs. Bone in chicken thighs can also be used instead as well.

Ingredients

  • 5-7 Chicken Boneless Thighs
  • 2 cups Spinach
  • 1 chopped Shallot (any onion can be substituted)
  • 5 cloves of Garlic (minced)
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 cup shredded Mozzarella
  • 1/2 cup grated Parmesan
  • 3 tbsp Avocado Oil
  • 1 tbsp unsalted Butter
  • 2 tsp Black Pepper
  • 1 tbsp Smoked Paprika
  • 1 tbsp All Purpose Seasoning

Directions

  1. Remove excess fat from chicken, and wash with cool running water and pat dry
  2. In a large bowl, add seasonings to chicken with a dash of oil. Rub together and allow to marinate for as long as you like
  3. In a skillet, heat oil over medium high flame and sear each chicken for 7 minutes per side
  4. Set seared chicken to the side and sauté shallot for 3 minutes
  5. Add garlic and sauté together for 3 more minutes
  6. Add spinach and cook together for additional 3 minutes, then add chicken broth and lower flame
  7. Cook together for 3 minutes, add heavy cream and mix well
  8. Once sauce is reduced a little, slowly add cheeses while mixing
  9. Add 1 tsp all purpose seasoning, followed by chicken thighs
  10. Baste chicken thighs in spinach sauce and cook on low flame for around 10 minutes
  11. Taste sauce and adjust seasoning as needed
  12. Serve hot over rive or mashed potatoes
