Loaded Baked Potato

 2 large russet potatoes
 1 cup sharp cheddar, shredded
 1/4 cup heavy cream
 4 slices bacon
 1 stalk scallion (finely chopped)
 small onion (chopped)
 1/2 bell pepper (chopped)
 3 cloves garlic (minced)
 1 lb shrimp
 1 tbsp cream cheese
 3 tsp Garlic Powder
 2 tsp Cajun Seasoning
 2 tsp Adobo All Purpose Seasoning
 2 tbsp unsalted butter
 1 tsp salt

Preheat oven to 400F

Properly wash and scrub potatoes and pat dry with paper towel.

Drizzle a little oil on each potato and wrap in aluminum foil. Set potatoes in a baking dish and bake for 40 minutes to 1 hour, depending on how large they are

While potatoes are baking, pan fry bacon in hot skillet until crispy (no oil needed)

Devein and wash shrimp, season with seasonings and a pinch of salt, leaving a tsp of garlic and cajun for later use

Remove bacon and set aside. Cook shrimp on medium high (2 minutes per side) in the same skillet with the oil left behind from bacon. Remove shrimp, set half the shrimp aside and chop the remaining half into smaller pieces.

To the same skillet, add onions and saute for 2 minutes, then peppers and garlic and saute for 3 minutes together.

Add heavy cream and cook for 2 minutes, then add cream cheese and a tbsp of cheddar. Add remaining seasonings and a pinch of salt. Mix together and cook for 5 minutes.

Once potatoes are fully cooked, slice a thin layer off the top of each. ( you can allow them too cool a little, or work your way around.)

Scoop the inside of potatoes and add to bowl along with the tops that were cut off. Add butter and mash potatoes.

Add diced shrimp and cheese sauce to bowl, (leaving a drop of sauce for later use). Mix until everything is combined.

Fill each potato, then add remaining cheese sauce on top. Add remaining whole shrimp on top, as well as a sprinkle of cheddar

Bake for around 5-7 minutes, until cheese has melted. Chop bacon and sprinkle on top, along with chopped scallion for garnish.
